I tested adding something (Carded 1/10 Gold Britannia) to the basket and it would have allowed me to buy with funds already added in there.

That would be classed as bullion and not commemorative.

Remember if you are buying direct from Royal Mint your card wont be charged until the day of dispatch. 

So if funds are a wee bit tight for you next week, given the short notice of release but you'll be able to afford in January, you wont be charged until January

(you'll obviously need adequate credit limit for the payment to authorise next week)

Now that the bullion Memorial Sovereign has been announced and that it will be dated 2022, released in January 2023, when are we likely to see a 2023 dated sovereign and will it have St George & the dragon?

It says on the Royal Mint website that the bullion Memorial Sovereign will be available to order in January. 
In the ‘register interest’ section.
