From 2016 onwards, China Mint went metric. The 1 Troy ounce (31.1 grams) coin was reduced to 30 grams. The designs continue to change every year.
2016 is a good starting point for new Panda collectors cause they would NOT have to chase the older/higher premium coins.

Another option is to consider trading like to like in order to thin or eliminate duplicates without affecting your collection inventory count.

Being previous year issues, they would all be challenging to source. The Perth Mint Lunar Dragon would be the higher premium of the 3 with the Dragon being popular. The earlier year Panda (2005 & 2007) would be higher premium and lower mintage (if you can source them). Good luck with the hunt.
I was going to suggest the American Gold Buffalo from your wish list but they did not start until 2006.

Me, I have 1 troz gold China Panda for my 2 kids born in 1985 & 1989. I actually have a complete run of all the 1 troz gold designs from 1982 - 2015 (quit the China Panda gold series when they switched to 30 gram weights).

I have given gold coins as gift to my nieces and nephews for their wedding (starting in 1990) with the year of their wedding (1/4 - 1/2 troz) Same for my daughter on the year she was married (1 troz). I bought gold coins for my kids with their birth year (1 troz) and have also done so for my grandchildren (1 troz).

All the 1 troz platinum Panda issues from before (1987 - 1990) were all proof issues (highest max mintage was 1989 with 3000).
1987 - 1990 are shown in the above photo. The two on top are Coin Show Commemorative Pandas. 1987 NY platinum and 1988 Basel gold with an error Pt die designation (no Pt were issued for Basel).
