It is a big difference between scrap value and spot value.
Scrap value is the price advertised by some dealers to buy broken jewellery or very damaged coins, way under the spot value.
As an example, I will compare the spot price and the scrap price for one sovereign (7.98g of .9167 gold purity).
 
1. Spot price for a sovereign at today's rate of £1590.08/oz.
£1590.08/oz : 31.103g/oz x 7.98g x 0.9167 = £373.97.
2. Scrap price offered for the weight of a sovereign today by BullionByPost (see screenshots): £280.47.
 
As you can see, the difference is huge, probably from here it was your confusion.
 
The real value of a sovereign is given by the spot price and nobody from this forum will sell under spot value. Usually, basic bullion sovereigns are selling on here between 2% and 5% premium (over spot). Who is really desperate to sell quick, can sell to Atkinsons who pay today £372.30/sovereign or sell even a little better on forum.
