I have purchased a few small gold items before, but want to ramp up my purchasing due to the uncertainty of things these days. Should I buy a variety of weights and styles so I can have the flexibility of moving them as needed or focus certain weights? What about coins vs bars or both? Also the same question about silver.

Sovereigns are often cited as being "the worlds favourite coin"

Silver is more speculative than gold.

Being in the US it might be better for you to go for US coins rather than sovs etc.  I don't know for sure though....

I'd go for coins over bars every time.

Don't touch ebay

If you are not sure how to tell genuine from counterfeit buy here from a trusted seller or from a dealer.  

Prices here are generally pretty good but check against dealer prices.  

You might be tempted by proofs but from your post, I think you should just be buying bullion as close to spot as possible.
