How do you open up coin capsules?

Try using a finer blade knife, craft knife, Stanley knife or razor blade. Fingers nails usually work if they are long enough.

There should be a small niche you can get a knife between the joint in the capsule, be careful the coin doesn't go flying and get damaged. This type of capsule is a pain in the erse.

A cheap wood chisel is the best way I've found to open capsules big or small. Fantastic control, an edge that can fit in the smallest seams and plenty sturdy to slow twist around the capsule edge to open without damage.
