Should I be putting my BU coins into air-tites? Should I ever be touching my BU coins with my bare hands?

If you expect any kind of premum when you sell then it's best to do everything you can to keep them good, I would use gloves as apparently the oil on your skin can cause a reaction on the silver over time.

Get some cotton gloves. i got a few pairs off the market. If you get into the habit of handling the coins with gloves you won't come unstuck. i have some coins and rounds which are a long way from pristine so i must admit i have touched them with my bare hands. If the coins are in good condition, even if they are Philharmonics or something similar why not try to keep them nice.

Keeping all of them in capsules? It can turn out expensive. There is the issue of increased bulk and probably getting tubes to put the encapsulated coins into. Is it best practice? i think it is.
